#220 grit stone is rougher, and therefore suitable for coarse sharpening of non-Japanese knives and repairing chipped or otherwise damaged blades. #1000 grit is the most widely used granulation, and is used for general sharpening, while #6000 grit is best suited for fine sharpening and removing the burr.
