This tiny carving knife from Ikeuchi Hamono does not have the standard looking petty shape since it was primarily used for wood carving. However, due to its shape and short, single bevel blade (right-handed users only!), it is very handy in the kitchen too. Ideal for carving and decoration of your food, as well as with filleting smaller blue fish.
This Small petty is made of White steel #2 (Shirogami), forged to a hardness of 61-62 HRC. It is intended for experienced knife owners who know how to handle and take care of knives made of White steel #2, which will develop some patina due to the high amount of carbon (C) in their chemical structure.
The handle is made of durable Chestnut wood.
