A professional kitchen knife made using a special TOJIRO “know how” method, which allows the knife maximum flexibility. Extremely thin blade that stays sharp for a very long time. It is a very flexible, delicate and precise kitchen knife.

In addition to the aesthetic, the recesses/dimples on the blade also have a useful value, as the uneven surface creates air pockets between the food and the blade when cutting, which prevents the food from sticking to the knife. It is therefore ideal for cutting meat and raw fish such as salmon.
